have been looking for the perfect smoker/cooker for a number of years.
I've found it with the Model #84. The next day after your guy delivered
it, I cooked 135 BIG chicken breasts on it for a United Way meal for my
staff in Cornelia. It was absolutely unbelievable. I had
less than 5 degrees difference from front to back. I've used a lot
of smokers, but I've never seen that close of a tolerance. It's
usually more like 10 to 15 degrees-with a hot spot near the fire box.
I used the whole cooking grate and had NO hot spot-unbelievable!!
I wouldn't have believed to look at it that I could have gotten that many
big chicken breasts on. The upper rack really helps on cooking space
and makes it a little deceiving as to how much space is really there.
As we discussed by phone, I am looking forward to receiving the second Model #84 with the little customizations you are doing for me.
