Ben, It has been a
pleasure using your product. Since March 2003 we have done 4 concessions, 2
contests and many private parties. In that time we paid the smoker and had
our first win in a contest in Lynchburg , Va. We have no problems with the
health Dept requirements. It is easy to manage. I am looking for a
concession BBQ trailer next. Thanks, John

Hi Ben,
Just wanted you to know the 84 is doing a
great job in the trailer. I am more than pleased with the performance of
the smoker.
I have sent some pictures of our "rig." By the
way, the trailer pulls very well and has good weight distribution with the
smoker placed where you and your crew placed it. We are set up and serving
this cold winter in Indiana and the heat from the smoker is just right to
keep the inside warm. Our tanks are inside so a small space heater keeps
everything warm over night. Keep up the good work! I'll gladly recommend
your smokers to anyone. Most of all, our customers love the products
cooked on the smoker! Don Suiter (Indiana

Ben, I take back last weeks comment
that I wouldn't get the gas option again. I did a catering job this weekend.
Hotdogs and hamburgers and the gas played an important couple of roles.
I
preheated the grill to around 300 degrees using the gas burners while I built a
roaring wood fire in the firebox. I did as you instructed and opened up all the
air vents including cracking the firebox door about 3 inches. The wood fire
took off and got the grill up to about 400 degrees.
I
cooked 130 1/2 pound hamburgers at one time. No flame ups. I flipped them once
about 20 minutes into the cook. Once they were all done I shut down the vents
on the firebox and turned on one gas burner on the opposite end from where I
stacked all the cooked hamburgers. The gas kept them heated during the serving
process.
I
cooked two big serving pans of baked beans in the warming box as well as 180
hotdogs. I placed the dogs in a pan of water directly on the firebox, brought
them to a quick boil and then moved up on a warming box shelf to keep them
warm. As I need them I threw them on the grill surface to give them a grilled
look and a smoked taste.
Now
I know I can grill or smoke on my 84:)
Thanks, James Crocker

"First Cook" with new
Lang 84... Sunday I smoked 30 racks of
ribs to feed the guys at the Sporting Clays Club, here are the pix:
I meant to get more pix when
they were done, but the aroma of smoked ribs was driving them crazy and they
wanted the ribs ASAP. -Eldon Belyea

The 84-inch cooker is
just great! I cooked two whole pigs in July. At
225°F it took seven hours for a 70 pound pig and I used oak and pecan. The
double grate with the 3/8" threaded rods worked great for turning the pig. We
turned the pig after five hours. They were delicious!
Pizza also turn out great! I use
the ceramic pizza stones and I have received more compliments on my baby back
ribs than ever. You staff is very professional and courteous. I am
recommending you to all my friends. Always "Expect the Best."

My neighbor Andrew and I
purchased your model 84 smoker-cooker three weeks ago. We're very happy with
the cooker! Our recent pig roast went extremely well (170 pounds butterflied
from the butcher).
We
anticipated a cook time of 14 hours (average temperature around 250 degress
starting Friday night at 9pm and ending Saturday at 1pm). To our surprise, we
were done cooking at about 9am on Saturday. We had more then enough time to
pull pork, cook side dishes, and keep everything warm till the guests
arrived.
Prior to the pig roast, we
practiced using the smoker on a variety of meats including fish, chickens,
turkeys, and a beef round roast. All were delicious and notable for flavor and
juiciness. Our neighbor from Norway was escatic to smoke salmon filets using an
old family marinade based largely on lemon and dill. The salmon was absolutely
wonderful. Needless to say the cooker has become a meeting point for our
neighbors who are anxious to try out 'what's cooking'. We can't wait to
barbecue some pork ribs this weekend!! -Bill Phelan

What a cooker! I have been very
pleased with my Model 84 with the warming oven. The warming oven will cook
large pans of beans, rice, and even bake potatoes. I have done whole pigs,
hams, chickens, turkeys, ribs, and a truckload of beef top rounds. Whatever
temperature I need, it will cook at it. The unit looks great in parades as well
as on parking lots at ball games. When I picked it up that Saturday morning, I
was worried about my 650 mile trip home that day. It pulled great just like you
said it would. I was home by midnight that night. I had to purchase a temporary
light kit in South Carolina though. I kept blowing fuses. I found a short in
the wiring coming out of the tail lights after I got home. I will be using my
Model 84 at a Civil War Reenactment this weekend. We will fire it up around
midnight on Thursday and cook until Sunday morning. -Rick

"Hi, just wanted to say thank you
for being so great when we came to pick up our grill. Tho we were nervous about
hauling it on the back of my little nissan, we were pleased to find it pulls
like a dream and didn't budge or sway when we were passed by an 18 wheeler
doing 65 miles an hour on a 2 lane road!! Just a quick question... is there a
high temperature that is "bad?" We seasoned the grill and then stoked it up and
the temperature really climbed at one point to @ 475 degrees. My husband and I
became concerned that possibly there was a temperature limit. Please let us
know. But the chickens we ate were delicious! The meat was moist and full of
juices. It's early, but so far I'm just tickled w/ the griller. I even like to
sit in the yard and just look at it! thanks" - Doris Smith

| Ben,
I really appreciate the time you spent
answering all my questions before and after my purchase. I am really glad I
decided on the Model 84, rather than the 60. I believe the extra cooking space
will be put to good use.
I fired it up only an hour after
Julian delivered it and seasoned it for a couple of hours. Before I knew it
friends and neighbors were bringing over food, eager for me to put it to the
test.
On the first outing I cooked 6
slabs of ribs 20 chicken quarters, 4 chicken breast, 12 Brauts, a package of
hot-dogs, and a big hunk of bologna (all this I still did not put a dent in the
available cooking space).
My inexperience using the Model
84 didn't show. The food was delicious and everyone at till they couldn't hold
anymore and then took home some leftovers. Im having no shortage of people
wanting to bring meat to my July 4th cook!!!!!
Thanks, James Crocker
